This vegan rainbow smoothie is full of beautiful colors and flavors. Fruits and vegetables are natures vitamin rich rainbow of goodness. Natures rainbow of foods are naturally vegan and gluten free which makes this recipe a healthy go to for breakfast or afternoon snack.
In honor of the victims and families of the Orlando shooting, I am going to post 49 rainbow recipes. My heart goes out to everyone who lost someone in this horrific hate crime.
The LGBT community proudly flies a flag of rainbows. This recognizable flag has been an symbol of of gay pride since 1978. The International Flag Association deemed the rainbow flag an “official flag” in 1986. The flag has transformed from it’s original eight (8) stripes to the present six (6) stripes. For me the flag represents, love, life and peace for all.

Vegan Rainbow Smoothie
- 2 cups strawberries , fresh or frozen
- 1 cup carrots
- 1 banana , fresh or frozen
- 1 cup baby spinach or kale
- 1/2 cup red grapes
- 1/2 cup blueberries
- 1 tablespoon agave nectar or honey
- 1-2 cups ice
- 2-3 cups coconut water
- Place all ingredients into Vitamix or blender of your choice. Blend until smooth.
