I’ve had a real lack of inspiration for new recipes lately. It likely is, in part, due to COVID-19 and all it entails. While meandering around the house this past week I suddenly knew how to reboot this recipe. It’s completely different but 1000x better. It was one of my first recipes back in 2016 and I am proud to say this hearts of palm salad is one of my favorites this year!

I am forever looking to create a simple crisp recipe. Hearts of palm are a regular staple in my pantry. (PLUS, my Costco sells a 2 pack at a steal!) It was only a matter of time until it became obvious these white cylinders of goodness would make the perfect salad or side. It also helps that I was starving when my light bulb of inspiration finally turned on. Soon after, hearts of palm salad was created!
What are, hearts of palm?
Hearts of palm are tender, white cylindrical in shape, and have a mild flavor similar to artichokes. Hearts of palm are low in calories, a good source of vitamins, and easy to find at your local grocery store. They have no fat and have a good source of potassium, copper, Vitamin B6, and zinc. Remember to read the labels if you have any special dietary concerns.
Who likes to pick their own adventure?
This is the perfect recipe to make “your own.” A few ideas to give it your own spin: baby spinach, basil, dill, parsley, thyme, lime, cilantro, kale, cucumbers, carrots, f**k I could go on forever.

Warm weather is on the horizon. One of the best ways to experience the change in season is through your taste buds. Your plate will be overflowing with spring flavors with this fresh and zesty hearts of palm salad!
Red onion tip
After you slice red onions place them in an ice bath for about 10 minutes. The ice bath will soften “the bite” red onions can give the dish a milder flavor. (I have also found it decreasing any heartburn)

Ingredients
- 1 14 ounce can hearts of palm drained and diced
- 1/4 cup green onions diced
- 1/4 cup yellow pepper diced
- 1/4 cup radish diced
Dressing:
- 1/2-1 teaspoon sriracha
- 1/2 lemon juiced
- salt and pepper to taste
Instructions
- Dice up all the fresh vegetables and place in a medium-size bowl. Add the dressing ingredients to the vegetables and stir until well mixed. Salt and pepper to taste. Add fresh herbs and spices as desired. Chill for an hour or overnight.
