Ingredients
- 1 tablespoon olive oil
- 1 cup onion chopped
- 2 15 ounce cans black beans rinsed and drained
- 1 10 ounce can diced tomatoes with green chillies
- 1 15 ounce can diced tomatoes
- 1 tablespoons cumin
- 1/2 teaspoon paprika
- 1 tablespoon minced garlic
- 1/2 teaspoon salt
- 1 to 2 cups vegan beef broth or Gluten-Free beer
- 1 lime juiced
Toppings
- 1 fresh lime
- 1 cup cilantro chopped
Instructions
- Place all ingredients in a large crockpot, stir to combine and put the lid on.
- Cook 8 hours on low, or 4-6 hours on high.
- Add lime and cilantro before serving, if desired.
