Roasted Rainbow Veggies are delicious, good for you, and a satisfying side or main dish. Roasted rainbow veggies are fun to serve, making a colorful statement for any meal. Let’s just say, roasted veggies are not only beautiful but excellent for you. Beat that!
The red of the rainbow, red bell peppers. Red bell pepper are mainly made up of water and carbs. Bell peppers are also a good source of fiber. Bell peppers are rich in vitamins and antioxidants especially vitamin C. Harvested green, the red bell peppers are the mature, sweeter, milder version of it’s younger self.
The orange of the rainbow, sweet potatoes. Not always orange on the inside, sometimes a red purple color which cannot be distinguished by the skin color. This wonderful potato is chock full of beta-carotene, vitamin A and vitamin C. Baked, steamed, grilled, delicious whatever makes you happy.
The yellow of the rainbow, yellow squash. Also considered summer squash because it is harvested while immature. The skin of yellow squash contains the richest source of antioxidants, so leave it on.
The green of the rainbow, broccoli. Broccoli is a relative to cabbage, Brussel sprouts, cauliflower, and kale. Where to begin, low in calories, found to prevent diseases and rich in health promoting properties. Can’t eat too many of this nutrition rich vegetables.
The purple of the rainbow, red cabbage. Red cabbage has high levels of anti-oxidants which is giving pause for the plethora of health benefits. Research is indicating numerous benefits, including, but not limited to, premature aging, Alzheimer’s disease, gastrointestinal health, weight-loss, eye health, reduced cancer risk, and immune system support. Wow! The only negative research I found was for pregnant women. Babies of mother’s that consume a lot of red cabbage tend to have colic when born. Who knew? I think I am going to grab a head for snack tonight, too good to pass up!

Ingredients
- 2 Red peppers , sliced
- 2 Sweet potatoes , cubed small, steamed for 5 minutes
- 2 Yellow squash , sliced
- 1 cup broccoli , flowerets
- 1 cup purple cabbage , chopped
- Olive oil , to taste
- Salt and pepper , to taste
Instructions
- Preheat oven to 450 degrees F.
- Clean and prepare all vegetables. Using large cookie sheet lined with foil layout vegetables. Drizzle olive oil over vegetables, salt and pepper.
- Place in heated oven for 10 minutes or until vegetable are tender and lightly seared.
