- 1 tomato , sliced
- 1 orange pepper , sliced
- 1-2 tablespoons hummus
- 1/2 avocado , sliced
- Red onion , pieces
- 1 small purple beet , sliced
- 1 Gluten free bread , toasted
- Salt and pepper
- Fresh herbs cilantro, basil, or dill
- Arrange all ingredients onto toasted gluten free bread, starting with the hummus.
- Top the rainbow vegetables with fresh herbs. Salt and pepper to taste.
