Sliced tomato, avocado, and red potato salad can be a light lunch or an accompaniment to almost any main dish. Great for summer, no oil or mayonnaise, just fresh veggies, lemon, vinegar, herbs and spices. Yum.
Walked in from the grocery store and asked Kelsey if she wanted an open faced sandwich with tomato slices and avocado? Of course. Kelsey’s not about to turn down a new recipe. I was having a food brain storm of the traditional tomato and mozzarella salad we used to eat. Now that we don’t eat cheese, I had to think about what I could easily use to replace the mozzarella? Last nights leftover cooked red potato, of course! Cooked red potatoes have the soft consistency of mozzarella and from a distance, without the skin, it even looks similar to the dairy version. Using the leftovers, I threw it together. When all else fails, use leftovers! Super easy and delicious.
Nutritionally speaking, a medium baked red potato contains approximately 34g carbohydrates, 3g of fiber, 4g of protein, vitamin C, calcium, iron, B6 and virtually no fat. For 1 ounce of mozzarella you’ll eat over 57% of calories from fat, high in sodium, cholesterol and few nutritional benefits. The red potato, for me, sounds like the healthier bet. My facts may not be perfect, thats because I am not, but when comparing the dairy version of this salad to an unprocessed tuber, the tuber wins out.

Ingredients
- 4 campari tomatoes , sliced thin
- 1-2 avocados , sliced thin
- 4 red potatoes , cooked and sliced
- 2 tablespoons red onions , chopped
- 1 teaspoon capers
- 1 tablespoon basil , torn
- 2 tablespoons red wine vinegar
- 2 tablespoons lemon juice , fresh squeezed
- 1 tablespoon lemon zest
- salt and pepper to taste
Instructions
- Arrange each slice, one at a time, of avocado, potato, and tomato. Top with red onions, capers and basil. Drizzle red wine vinegar, lemon juice, and lemon zest.
- Salt and pepper to taste.
