A Bagel Challenge?
Yes, a bagel challenge. What’s the challenge? Make a vegan gluten-free breakfast bagel every day in April. The difficult part is to never create the same recipe twice. So far, it hasn’t been too difficult. My creative juices are working hard but inspiration is everywhere.
Not a lover of traditional breakfast foods so creating something extraordinary has been fun. A peek in the refrigerator or pantry and I’m on my way. Inspiration often comes from leftovers. Hence, the spawn of a juicy marinara, grilled kale, and shiitake mushroom pizza bagel breakfast perfected! Subsequently, more to come.
Below are the first two weeks in April. These bagel pics are here to inspire and get you out of the breakfast, or lunch, stupor.
April 1st-7th Vegan Gluten-Free Breakfast Bagels
Baby Spinach, Grilled Eggplant, Tomatoes, Vegan Feta, Scallions
Avocado, Grilled Peppers, Grilled Red Onions
Hummus, Grilled Golden Beets, Purple Cabbage Slaw, Nutritional Yeast
Hummus, Avocado, Red Lentils, Tomatoes, Grilled Asparagus
Organic Smooth Peanut Butter, Organic Sliced Strawberries
Smashed Avocado, Baby Spinach, Salsa, Nutritional Yeast
Marinara, Grilled Kale, Grilled Shiitake Mushrooms, Vegan Feta, Fresh Basil
Well, there you have it. The first seven days of April. These vegan breakfast bagels were delicious, inspiring to develop, and loads of fun to make. In addition, the easiest recipe to create was April 6th. Four simple ingredients, yet thoroughly satisfying, thankfully, I was sick on the sixth!

Roasted Kale, Grilled Sweet Onions, Broccoli Sprouts, Tomatoes, Balsamic Vinegar
Balsamic Caramelized Onion Hummus, Roasted Broccoli, Mild Peppers, Red Onions
Romaine Lettuce, Roasted Red Beets, Broccoli Sprouts, Vinaigrette, Red Pepper Flakes
Romaine Lettuce, Roasted Japanese Sweet Potatoes, Scallions, Hot Sauce
Sriracha Just Mayo, Baby Spinach, Tempeh Bacon, Organic Tomatoes, Salt, Pepper
Air-Fried Kale, Tofu “egg,” Tempeh Bacon, Sweet Red Peppers
Romaine Lettuce, Tofu “egg” salad, Paprika, Dill
Well, there you have it. Two weeks of amazing super easy bagel breakfast or lunch not so boring meals.

I am vegan and gluten free. I have been having trouble finding a vegan gluten free brand that is actually delicious. Also most vegan cheeses make me feel bloated. Do you have any recommendations for both things? I would love to try out all your recipes!

Vegan and gluten-free that is good is always a challenge. O’doughs brand for bagels is my favorite which I find at Earth Fare. Reach out to the company if you have difficulty finding it. GF bread loaves I love Little Northern Bakehouse also at Earth Fare. Not big into the vegan cheese but when I do indulge I like Follow Your Heart Parmesan shreds. Another cheese brand that is great for pizza and melts really nicely is Violife. We will be posting a new recipe video for our vegan ranch dressing this weekend that is crazy good. Keep watching Vegan Gluten Free Life is making some changes to our site within the next few months…exciting stuff.
