Who doesn't love under 10 ingredient simple, delicious, recipes? An easy, gluten-free, full of fiber, breakfast perfect any time of the day. You can't get better than that.
1tablespoonground flaxseedblend with 3 tablspoons warm water to make a flax "egg"
1ripe banana
1cupplant-based milk
1 1/2teaspoonspumpkin pie spice
1teaspoonbaking powder
1teaspoonvanilla extract
2tablespoonsvegan butter

1cupfresh or frozen organic berries
Instructions
In a small bowl add ground flax-seed stir in 3 tablespoons warm water. Set to the side
Using a large bowl add banana and mash with the back of a fork until smooth. In the same bowl now add in the oat flour, pumpkin pie spice, baking powder, vanilla extract, and flax "egg." Blend together.
Slowly add the plant-based to the flour mixture stirring with a fork until it just comes together, do not overmix.
Let the batter sit for up to 30 minutes if you can, otherwise, 5-10 minutes will do.
Place 1/2 of the vegan butter onto a griddle or large fry pan save the rest for the next batch.
Use a 1/4 measuring cup to scoop out the batter.
Allow the pancakes to bubble before flipping. Cook until golden brown on each side.
Top with fresh fruit, maple syrup, or whatever your tastebuds are hankering for.
Notes
Don't want your pancakes too sweet? Take frozen fruit heat it in a saucepan and top the pancakes with some natural sweetener.
