This easy baked oatmeal is a blend of traditional oatmeal with the fun of an oatmeal bar! Sit down and enjoy or grab it and run. Either is filling, satisfying, delicious, goodness!
2flax-eggs,2 tablespoons ground flax to 6 tablespoons warm water
2cupsgluten-free oats
1/4cupslivered almonds,raw
1/4cuppumpking seeds,raw
1/4cupdates,pitted and chopped
1teaspoonbaking powder
1/2teaspoonsalt,optional
1/8cupmaple syrup
1cup plant based milk
1banana,1/2 inch slices
1cupfresh or frozen berries
1/2cupfruit,reserved for topping
Instructions
Preheat oven to 350 degrees F.
Prepare flax-egg: in a small bowl, stir well to combine flax and set aside for 5 to 10 minutes until thickened.
In a large bowl, stir together oats, almonds, pumpkin seeds, dates, baking powder, and salt. Then, pour the wet ingredients into the dry ingredients and stir to combine.
Spray an 8x8 inch baking dish with cooking spray. Layer the baking dish with 1 layer of banana slices and 1 layer of berries and top fruit with oat mixture. Sprinkle reserved berries on the top.
Bake for 45-50 minutes until top is lightly browned and set in the middle. Remove from oven and let cool for 10 minutes before serving.
Notes
If you want your baked oatmeal to be sweeter add additional maple syrup.
