Spicy chipotle coleslaw is not your traditional slaw. This is memorable slaw vegans or non-vegans will love. Great for picnics, parties, lunch, or dinner.
Cut slices, or shred both red and green cabbage. Rough chop spinach or kale. Chill
Dressing
Open a can of chipotle adobo sauce. Remove one or more peppers, dice fine.
Using a medium bowl add in chipotle adobo peppers and sauce. Whisk in vegan mayo, apple cider vinegar, agave, and celery seed (optional).
Using a large bowl add in both cabbages, greens, and dressing little at a time until desired creaminess. Salt and pepper to taste.
Refrigerate for one hour and serve.

Can be prepared a day ahead. Place the dressing in a closed container and the slaw in a separate bowl and cover. Prepare an hour ahead of serving. Stir the dressing into the slaw, cover, and place in the refrigerator for one hour. Serve.Keep in mind the dressing will breakdown the slaw over time. Add the dressing slowly until you are sure of the desired creaminess. You can always add more!
